Method
 

Step-by-Step Instructions
  1. Marinate chicken by seasoning thoroughly with salt, pepper, and half of the allspice for at least 30 minutes.
  2. Brown chicken in a heavy-bottomed pot with oil over medium-high heat for 5-7 minutes.
  3. Sauté chopped onions, garlic, ginger, and bell peppers in the same pot for about 5 minutes until onions are translucent.
  4. Add remaining allspice, tomato paste, and whole scotch bonnet pepper; cook for 2-3 minutes.
  5. Return browned chicken to pot and add chicken stock or water to submerge halfway. Simmer covered for about 1.5 hours.
