Step‑by‑Step Instructions for Japchae
  1. Soak the sweet potato glass noodles in hot water for approximately 30 minutes until they soften, then drain and rinse under cold water.
  2. Heat a large pan over medium heat, stir-fry the soaked noodles for about 5 to 7 minutes until tender.
  3. In the same pan, add oil and increase heat to medium-high, then cook your choice of meat for about 4 to 6 minutes.
  4. Add mixed vegetables to the pan and stir-fry for about 3 to 5 minutes until softened.
  5. Return the cooked protein to the pan with the noodles, add soy sauce and sesame oil, and toss together for 2 to 3 minutes.
  6. Transfer to a serving platter or bowls and garnish with green onions and sesame seeds.
