Preparation
- Preheat your oven to 190°C (375°F) and prepare a baking sheet lined with parchment paper or a greased loaf pan.
- In a large bowl, combine the ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and whole milk. Mix gently until just combined.
- Transfer the mixture to the baking sheet or loaf pan, shaping it into a loaf about 2 inches thick.
- Bake for 40-45 minutes or until the internal temperature reaches 74°C (165°F).
- While baking, melt butter in a saucepan, add minced garlic and sauté until fragrant, then stir in additional Parmesan and fresh parsley.
- Once cooked, brush the glaze over the meatloaf and return it to the oven for 5-7 minutes.
- Remove from oven, let rest for 5 minutes, then slice and garnish before serving.
