Ingredients
  

For the Meatloaf
  • 1 lb Ground Chicken or ground turkey or lean pork
  • 1 cup Parmesan Cheese or Romano cheese
  • 1 cup Panko Breadcrumbs or regular breadcrumbs
  • 2 large Eggs or flax eggs for vegan option
  • 4 cloves Minced Garlic
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Dried Basil
  • 1 tsp Dried Parsley
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 cup Whole Milk or plant-based milk
  • 2 tbsp Unsalted Butter can be omitted for dairy-free
For the Glaze
  • 1/2 cup Additional Parmesan Cheese
  • 2 cloves Minced Garlic
  • 2 tbsp Fresh Herbs like parsley

Method
 

Preparation
  1. Preheat your oven to 190°C (375°F) and prepare a baking sheet lined with parchment paper or a greased loaf pan.
  2. In a large bowl, combine the ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and whole milk. Mix gently until just combined.
  3. Transfer the mixture to the baking sheet or loaf pan, shaping it into a loaf about 2 inches thick.
  4. Bake for 40-45 minutes or until the internal temperature reaches 74°C (165°F).
  5. While baking, melt butter in a saucepan, add minced garlic and sauté until fragrant, then stir in additional Parmesan and fresh parsley.
  6. Once cooked, brush the glaze over the meatloaf and return it to the oven for 5-7 minutes.
  7. Remove from oven, let rest for 5 minutes, then slice and garnish before serving.
