Step-by-Step Instructions
  1. Begin by placing your boneless skinless chicken breasts evenly at the bottom of the slow cooker.
  2. In a mixing bowl, combine the chicken broth, fresh lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper. Stir well until all ingredients are blended together.
  3. Carefully pour the broth mixture over the chicken breasts in the slow cooker.
  4. Rinse the uncooked white rice to remove excess starch, then sprinkle it evenly around the chicken.
  5. Cover the slow cooker with its lid and set it to low for 4 to 5 hours.
  6. During the last 30 minutes of cooking, gently stir in the frozen peas.
  7. Once the cooking time is complete, gently stir the dish to combine chicken, rice, and peas. Serve warm.
