Preparation Steps
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the cornbread mix, sour cream, cream-style corn, and drained green chiles.
- Add in half of the shredded cheddar cheese, chopped bacon, diced green onions, eggs, and melted butter. Stir until well combined.
- Season the mixture with salt and pepper to taste, and stir gently.
- Grease a 9x9-inch baking dish or skillet and pour the cornbread mixture into it.
- Sprinkle the remaining cheddar cheese over the top of the mixture.
- Bake for 25–30 minutes until golden-brown and a toothpick comes out clean.
- Allow the casserole to cool for a few minutes before serving.
