  • 2 medium Apples Honeycrisp or Braeburn
  • 1 medium Onion diced into ½” pieces
  • 3 cloves Garlic fresh, minced
For the Glaze
  • 2 tbsp Olive Oil or aquafaba for oil-free
  • ¼ cup Maple Syrup adjust for taste
  • 2 tbsp Dijon Mustard stone-ground preferred
  • 1 tsp Salt adjust to preference
  • ½ tsp Black Pepper to taste
  • 1 tsp Thyme

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and prepare your baking pan.
  2. Core and chop apples into ½-inch cubes and slice carrots on the bias into ¼-inch thick pieces.
  3. Dice onion into ½-inch pieces and finely chop garlic.
  4. In a large mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme.
  5. Add the carrots, apples, onion, and garlic to the bowl and toss until thoroughly coated.
  6. Spread the mixture evenly onto the baking pan, avoiding overcrowding.
  7. Roast for 15 minutes, then flip the mixture and roast for an additional 10 to 15 minutes, until tender.
  8. Remove from oven, cool slightly, and serve.
