Preparation
- Preheat your oven to 425°F (220°C) and prepare your baking pan.
- Core and chop apples into ½-inch cubes and slice carrots on the bias into ¼-inch thick pieces.
- Dice onion into ½-inch pieces and finely chop garlic.
- In a large mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme.
- Add the carrots, apples, onion, and garlic to the bowl and toss until thoroughly coated.
- Spread the mixture evenly onto the baking pan, avoiding overcrowding.
- Roast for 15 minutes, then flip the mixture and roast for an additional 10 to 15 minutes, until tender.
- Remove from oven, cool slightly, and serve.
