- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for 30 seconds until fragrant.
- In a large mixing bowl, combine sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix thoroughly.
- Shape the mixture into approximately eight patties that are about ½ inch thick.
- Heat 1 tablespoon of olive oil in the skillet over medium heat. Place patties in the skillet and cook each side for about 5-6 minutes or until golden brown.
- Transfer cooked patties to a plate lined with paper towels to absorb excess oil. Serve warm with fresh vegetables or in pita bread.
