  • 1/2 cup Greek Yogurt or sour cream/dairy-free alternative
  • 2 tablespoons Dill fresh preferred
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin

Step‑by‑Step Instructions
  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  2. In a large mixing bowl, combine sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix thoroughly.
  3. Shape the mixture into approximately eight patties that are about ½ inch thick.
  4. Heat 1 tablespoon of olive oil in the skillet over medium heat. Place patties in the skillet and cook each side for about 5-6 minutes or until golden brown.
  5. Transfer cooked patties to a plate lined with paper towels to absorb excess oil. Serve warm with fresh vegetables or in pita bread.
