Ingredients
  

For the Steak
  • 1 pound Sirloin steak or flank/ribeye
  • 2 tablespoons Olive oil or avocado oil
  • 3 cloves Garlic minced; garlic powder is a substitute
  • 2 tablespoons Lemon juice or lime juice
  • 1 teaspoon Dried oregano or fresh herbs
  • 1 teaspoon Dried thyme or fresh herbs
  • to taste Salt use sea salt if preferred
  • to taste Black pepper
For the Bowl
  • 2 cups Cooked grains brown rice or quinoa; cauliflower rice for low-carb
  • 1 cup Roasted chickpeas optional
  • 1 cup Cherry tomatoes or diced bell peppers
  • 1 cup Cucumber or zucchini
  • 1/2 cup Red onion or green onions
  • 1/2 cup Kalamata olives or black olives
  • 1/2 cup Feta cheese optional; skip for dairy-free
  • 1/4 cup Fresh herbs parsley or dill; basil or mint are substitutes
For the Tzatziki
  • 1 cup Greek yogurt or coconut yogurt for dairy-free
  • 1/2 cup Grated cucumber
  • 2 tablespoons Lemon juice
  • 1 clove Garlic minced
  • to taste Salt
  • 1 tablespoon Honey optional; substitute with maple syrup

Method
 

Instructions
  1. Marinate the Steak: Whisk together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the sirloin steak in marinade and refrigerate for at least 30 minutes.
  2. Prepare Tzatziki: Combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and a pinch of salt in a mixing bowl. Stir until smooth and refrigerate for at least 15 minutes.
  3. Make Vinaigrette: In a small bowl, whisk together olive oil, lemon juice, honey (if using), salt, and pepper. Set aside while cooking the steak.
  4. Cook the Steak: Heat a cast-iron skillet over medium-high. Cook the steak for 4-5 minutes on each side until done. Let it rest for 5-10 minutes.
  5. Assemble the Bowls: Layer cooked grains in bowls, slice rested steak against the grain, and add fresh vegetables, olives, and feta (if using).
  6. Drizzle with Tzatziki and Vinaigrette: Add tzatziki sauce over the steak and vegetables, then drizzle vinaigrette over everything.
