  • 1 cup Pumpkin Puree 100% pure pumpkin puree
  • 3/4 cup Granulated Sugar can reduce to 2/3 cup if less sweetness is preferred
  • 1/4 cup Brown Sugar
  • 1/2 cup Unsalted Butter softened
  • 1 large Egg Yolk or 1 tablespoon of applesauce for a vegan version
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 2 teaspoons Ground Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Ground Cloves
For the Cream Cheese Frosting
  • 8 oz Cream Cheese softened
  • 1/4 cup Butter softened
  • 2 cups Powdered Sugar adjust based on taste preference
  • 1 teaspoon Vanilla Extract (for frosting)
  • 1 pinch Salt (for frosting)

Method
 

Steps
  1. Preheat your oven to 350°F (175°C) and prepare the baking sheet with parchment paper.
  2. Whisk together the all-purpose flour, baking powder, salt, ground cinnamon, nutmeg, and cloves in a medium bowl.
  3. In a large bowl, beat the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
  4. Add the pumpkin puree, egg yolk, and vanilla extract to the butter-sugar mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined; do not overmix.
  6. Drop rounded balls of dough onto the baking sheet, leaving space for spreading.
  7. Bake for 10-12 minutes until edges are golden and centers are set.
  8. Let cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  9. Frost cookies with cream cheese frosting once completely cool.
