  • 1 cup Red Bell Pepper diced
  • 1 cup Yellow Bell Pepper diced
  • 1 cup Orange Bell Pepper diced
  • 1/2 cup Red Onion finely chopped
  • 1/4 cup Fresh Cilantro chopped
  • 1/4 cup Fresh Parsley chopped
For the Dressing
  • 1/2 cup Olive Oil high-quality
  • 1/4 cup Red Wine Vinegar
  • 2 tablespoons Lime Juice fresh
  • 1 tablespoon Dijon Mustard optional
  • 1 tablespoon Honey or maple syrup
For Seasoning
  • 1 teaspoon Chili Powder to taste
  • 1 teaspoon Cumin to taste
  • 1 teaspoon Garlic Powder or fresh garlic

Method
 

Step-by-Step Instructions
  1. Rinse and drain all five types of beans under cold running water. Pat them dry with a paper towel.
  2. In a large mixing bowl, combine the prepared beans with diced bell peppers and red onion.
  3. Fold in chopped cilantro and parsley into the bean and vegetable mixture.
  4. In a small bowl, whisk together olive oil, red wine vinegar, lime juice, Dijon mustard, and honey until emulsified.
  5. Pour the dressing over the bean and vegetable mixture and toss gently to coat.
