  • 2 pieces Mini Cucumbers Julienned, unpeeled
  • 1/2 cup Panko Bread Crumbs Divided
For the Spicy Mayo Dressing
  • 1/2 cup Mayonnaise Low-fat optional
  • 2 tbsp Sriracha Adjust to taste
  • 1 tbsp Lemon Juice Fresh juice recommended
  • 1 tbsp Sugar Can substitute with honey
  • 1/2 tsp Chili Powder Optional

Method
 

Step-by-Step Instructions
  1. Prepare the Imitation Crab by shredding it into thin strips and set aside.
  2. Julienne the Mini Cucumbers into thin strips about 1/8 inch wide.
  3. Combine the shredded imitation crab, julienned cucumbers, and half of the panko bread crumbs in a mixing bowl.
  4. Mix in three-quarters of the spicy mayo dressing into the bowl and fold gently.
  5. Garnish the kani salad with remaining panko bread crumbs and drizzle with the last bit of spicy mayo.
