Step-by-Step Instructions
  1. Preheat your Blackstone griddle to medium-high heat, approximately 375°F. Add 1 tablespoon of oil to the hot surface.
  2. Slice the Yukon Gold potatoes into thin rounds and add them to the griddle. Cook for about 8-10 minutes, stirring occasionally, until golden brown and tender.
  3. Add remaining oil, then toss in diced zucchini, bell pepper, and onion. Sauté for 5-6 minutes, stirring frequently.
  4. Introduce the sliced smoked sausage to the sautéed veggies. Cook for an additional 4-5 minutes, stirring occasionally.
  5. Sprinkle in garlic powder, smoked paprika, black pepper, salt, red pepper flakes, and oregano. Stir everything together for 1-2 minutes.
  6. Return the cooked potatoes to the griddle, mixing with the sautéed veggies and sausage. Cook for another 2-3 minutes.
