- Bring a large pot of salted water to a boil over high heat. Add rotini and cook according to package instructions, typically around 8-10 minutes, until al dente. Drain the pasta and rinse it under cold water.
- Heat a large skillet over medium heat. Add the lean ground beef and cook for about 5-7 minutes until browned. Drain excess grease, add taco seasoning and a quarter cup of water; cook until the liquid evaporates.
- In a large mixing bowl, combine the cooked rotini, seasoned beef, black beans, corn, and halved cherry tomatoes. Stir in the fiesta blend cheese.
- In a separate bowl, whisk together the Catalina dressing and sour cream until smooth. This will bind the flavors in your Taco Pasta Salad.
- Pour the creamy dressing over the pasta mixture. Stir gently yet thoroughly. If serving immediately, fold in crushed Doritos and shredded lettuce.
