Preparation Steps
- Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
- In a mixing bowl, combine chicken, olive oil, lime juice, and fajita seasoning. Marinate for 10-15 minutes.
- Add sliced bell peppers and onions to the chicken mixture and toss until coated.
- Layer half of the chicken and veggie mixture in the baking dish. Add half of the diced tomatoes and 1 cup of cheese.
- Repeat layers with the remaining chicken and veggie mixture, tomatoes, and cheese.
- Cover with aluminum foil and bake for 20 minutes. Remove foil and bake an additional 10-15 minutes.
- For a golden finish, broil for 2-3 minutes, watching closely to avoid burning.
- Let cool for a few minutes, garnish with cilantro, and serve with warm tortillas.
