Ingredients
  

For the Casserole
  • 1 pound Boneless, Skinless Chicken Breasts/Thighs can substitute with shrimp or tofu
  • 3 cups Bell Peppers (red, yellow, green) use any color based on availability
  • 1 large Onion yellow or red preferred
  • 1 cup Shredded Cheese (Cheddar, Monterey Jack, or Pepper Jack) can use vegan cheese
  • 1 can Diced Tomatoes with Green Chilies drain for less moisture
  • 2 tablespoons Olive Oil can use avocado oil
  • 2 tablespoons Lime Juice fresh lime preferred
  • 1/4 cup Fresh Cilantro or parsley if preferred
For the Fajita Seasoning
  • 1 tablespoon Chili Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Oregano
  • 1/4 teaspoon Cayenne Pepper adjust for heat preference
  • to taste Salt and Black Pepper essential seasonings

  • Mixing Bowl

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
  2. In a mixing bowl, combine chicken, olive oil, lime juice, and fajita seasoning. Marinate for 10-15 minutes.
  3. Add sliced bell peppers and onions to the chicken mixture and toss until coated.
  4. Layer half of the chicken and veggie mixture in the baking dish. Add half of the diced tomatoes and 1 cup of cheese.
  5. Repeat layers with the remaining chicken and veggie mixture, tomatoes, and cheese.
  6. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake an additional 10-15 minutes.
  7. For a golden finish, broil for 2-3 minutes, watching closely to avoid burning.
  8. Let cool for a few minutes, garnish with cilantro, and serve with warm tortillas.

Notes
