- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add the sliced chicken sausage and cook for 5-7 minutes until golden brown and slightly crispy.
- Stir in 2 teaspoons of minced garlic and cook for another minute until fragrant.
- Introduce 2 cups of broccoli florets and sauté for 2-3 minutes.
- Add 1 cup of orzo pasta, 3 cups of chicken broth, 1 tablespoon of Italian seasoning, and salt and pepper to taste; stir well.
- Bring the mixture to a boil, then reduce to a gentle simmer. Cover and let cook for 10-12 minutes, stirring occasionally.
- Once cooked, take it off heat and stir in ½ cup of grated Parmesan cheese.
- Spoon into bowls and garnish with freshly chopped parsley; serve hot.
