- Melt 1/4 cup of butter in a skillet over medium heat. Add finely chopped onions and cook until translucent.
- Combine the sautéed onions with diced apple, dried cranberries, and pre-cooked rice. Season with thyme, salt, and pepper. Stir well and set aside.
- Preheat the oven to 375°F (190°C).
- Rinse the Cornish hens under cold water and pat dry. Rub the skin with olive oil and season with salt and pepper.
- Stuff each Cornish hen with the apple-cranberry rice stuffing mixture.
- Place hens breast side up in a roasting pan and roast for approximately 1 hour, until the internal temperature reaches 165°F (75°C).
