- Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
- In a skillet over medium heat, combine olive oil and butter, allowing them to melt together. Add the diced onion and sauté for about 5 minutes until the onions are soft and translucent.
- Add the minced garlic and sliced cremini mushrooms to the skillet, stirring well. Cook for around 8 minutes, or until the mushrooms are browned.
- Sprinkle in the dried thyme, salt, and pepper to enhance the filling's flavor.
- Remove the skillet from heat and stir in the cream cheese, Parmesan, and optional Dijon mustard.
- Unroll the thawed puff pastry onto a lightly floured surface. Cut diagonal strips along the edges while leaving the center portion intact for your filling.
- Spoon the cooled mushroom and cheese mixture into the center of the pastry. Starting from one end, fold the pastry strips over the filling, alternating sides to form a braid.
- Transfer the braided pastry to the lined baking tray. Beat one egg and brush it over the top.
- Bake in the preheated oven for 20-22 minutes, or until the pastry is puffed and deeply golden.
