Step-by-Step Instructions
  1. Wash the shrimp under cold water and pat dry. Slice the bell pepper and onion thinly.
  2. Heat olive oil in a skillet over medium heat. Sauté the bell pepper and onion for 5-7 minutes.
  3. Add the shrimp, cooking for 3-4 minutes until pink, then fold in the crab meat and warm through.
  4. Lay a tortilla flat, spoon filling onto the center, sprinkle cheese, and roll tightly.
  5. Grill the roll-ups seam-side down for 2-3 minutes per side until crispy.
  6. Slice the roll-ups in half and serve warm with dipping sauces.
