  • 4 fillets Salmon fresh or wild-caught
For the Teriyaki Sauce
  • 1/2 cup Soy sauce low-sodium if desired
  • 1/4 cup Honey or maple syrup
  • 2 tablespoons Rice vinegar or apple cider vinegar
  • 2 tablespoons Sesame oil
  • 2 cloves Garlic minced
  • 1 tablespoon Fresh ginger grated, or ground ginger
  • 1 tablespoon Cornstarch for thickening
For the Bowls
  • 2 cups Cooked rice white, brown, or quinoa
  • 2 cups Steamed broccoli florets or snap peas or asparagus
  • 1 cup Shredded carrots or bell peppers or cucumbers
  • 1 medium Avocado sliced
  • 2 tablespoons Green onions chopped
  • 1 tablespoon Sesame seeds optional for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Rinse and pat dry the salmon fillets, then place skin-side down on the baking sheet.
  3. In a saucepan over medium heat, combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Simmer for 3-5 minutes.
  4. Prepare a cornstarch slurry with cornstarch and cold water, stir it into the sauce and cook for 1-2 minutes until thickened.
  5. Brush the teriyaki sauce over each salmon fillet and bake for 12-15 minutes until the salmon flakes easily.
  6. While the salmon bakes, prepare the rice as per package instructions, usually taking about 15-20 minutes.
  7. Assemble the bowls by dividing the rice, adding broccoli, carrots, and a salmon fillet on top. Drizzle with remaining sauce.
  8. Garnish with green onions and sesame seeds and serve immediately.
