- Thinly slice the turkey and fresh mozzarella into even slices, about ¼ inch thick. Prepare your basil pesto.
- Spread a layer of basil pesto on the inside of each bread slice.
- Layer turkey and mozzarella on one slice of bread, add optional ingredients if desired, and top with the second slice of bread.
- Preheat a skillet or panini press over medium heat and grill the sandwich for about 3-5 minutes on one side.
- Flip the panini and grill for another 3-5 minutes until golden brown and cheese is melted.
- Check for melting, and grill for extra time if needed until bread is crispy and cheese is gooey.
- Remove from heat, cool slightly, and slice diagonally before serving with greens or dipping sauce.
