  • 8 ounces Turkey provides lean protein; can substitute with grilled chicken
  • 1/4 cup Basil Pesto store-bought or homemade
  • 4 ounces Fresh Mozzarella slice thinly for melting
  • 2 slices Bread (Panini or Ciabatta) opt for whole grain if desired

  • 1 medium Sliced Tomatoes adds juiciness and freshness
  • 1 cup Arugula provides a peppery bite; toss with olive oil

Method
 

Instructions
  1. Thinly slice the turkey and fresh mozzarella into even slices, about ¼ inch thick. Prepare your basil pesto.
  2. Spread a layer of basil pesto on the inside of each bread slice.
  3. Layer turkey and mozzarella on one slice of bread, add optional ingredients if desired, and top with the second slice of bread.
  4. Preheat a skillet or panini press over medium heat and grill the sandwich for about 3-5 minutes on one side.
  5. Flip the panini and grill for another 3-5 minutes until golden brown and cheese is melted.
  6. Check for melting, and grill for extra time if needed until bread is crispy and cheese is gooey.
  7. Remove from heat, cool slightly, and slice diagonally before serving with greens or dipping sauce.
