- In a skillet over medium-high heat, add one pound of ground beef and break it apart with a spatula. Sear for about 5–7 minutes until browned. Drain excess fat and season with salt and pepper.
- Lay out large flour tortillas. On one half, add a generous layer of shredded cheddar cheese followed by American cheese.
- Once the beef is cooked, scatter it over the cheese. Add favorite toppings like jalapeños or pickles. Fold the tortillas over to seal.
- In the same skillet, reduce heat to medium and add oil. Cook the folded quesadillas for 3–4 minutes on each side until golden brown and cheese is gooey.
