Ingredients
  

For the Pork Chops
  • 4 pieces bone-in pork chops about 1 inch thick
  • 1 teaspoon salt for seasoning
  • 1 teaspoon pepper for seasoning
  • 1 tablespoon vegetable oil for browning
For the Sauce
  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 2 tablespoons all-purpose flour or gluten-free flour
  • 1 cup milk can substitute with non-dairy
  • 2 cups chicken broth or vegetable broth
For the Scalloped Potatoes
  • 4 cups potatoes thinly sliced
  • 2 cups shredded cheddar cheese or Monterey Jack
  • 1 teaspoon paprika for topping
  • 2 tablespoons fresh parsley for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C). Set your oven rack to the center position.
  2. Season the pork chops with salt and pepper. Heat vegetable oil in a skillet over medium-high heat and sear the chops for 4-5 minutes on each side until golden. Remove and set aside.
  3. In the same skillet, lower the heat, add onion and sauté for 3-4 minutes. Add garlic and cook for another minute. Sprinkle in all-purpose flour and stir for 1-2 minutes.
  4. Gradually whisk in milk and chicken broth, allowing the mixture to simmer and thicken for about 2-3 minutes. Remove from heat and let it cool slightly.
  5. In a greased baking dish, layer half of the potatoes, half of the onion sauce, and half of the cheese. Repeat the layers.
  6. Place the browned pork chops on top, cover with foil, and bake for 1 hour. Then remove the foil and bake for an additional 15-20 minutes until the cheese is bubbling.
  7. Let it rest for 10 minutes, then sprinkle fresh parsley before serving.
