Ingredients

For the Cookie Base
  • 2 cups all-purpose flour Ensure it is freshly sifted for lightness.
  • 2 teaspoons ground ginger Use fresh ginger for a more robust flavor.
  • 1 teaspoon ground cinnamon Substitute with Chinese five-spice for a twist.
  • 1/2 teaspoon ground cloves Use nutmeg as an alternative.
  • 1/3 cup molasses Blackstrap molasses for a stronger flavor.
  • 1 cup brown sugar Light or dark brown sugar both work.
  • 1 large egg Aquafaba as a vegan substitute can be used.
  • 1/2 cup butter Margarine can also be used, but adjust chill time.
For the Coating
  • 1 cup powdered sugar Don't skimp for better crinkle results.

Equipment

  • Mixing Bowl
  • Baking sheet
  • Parchment Paper
  • Cookie scoop

Method

Step-by-Step Instructions
  1. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the molasses and egg until thoroughly combined.
  2. Gradually add in the all-purpose flour, ground ginger, ground cinnamon, and ground cloves, mixing gently until just combined to form a sticky dough.
  3. Cover the bowl with plastic wrap and refrigerate the dough for at least 2 hours, ideally overnight to enhance flavors.
  4. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper. Scoop out small portions and roll them into 1-inch diameter balls. Generously coat each ball in powdered sugar.
  5. Place the coated cookie balls on the prepared baking sheet with ample space. Bake for 10-12 minutes, or until the edges are set but the centers remain soft.
  6. Let the cookies cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
