- In a large mixing bowl, combine sourdough discard, all-purpose flour, baking powder, olive oil, and salt. Stir until a shaggy dough forms.
- Cover the bowl with a damp kitchen towel and allow the dough to rest for 10 minutes.
- Sprinkle a clean surface with flour, turn the dough out, divide into 12 pieces and roll each into a ball. Flatten to form discs about 3 inches in diameter.
- Take a disc and place mozzarella and chosen fillings in the center. Pinch edges together to seal.
- Arrange filled bombs on a baking sheet and bake in a preheated oven at 375°F for 18-20 minutes until golden brown.
- Remove from oven and let cool for 5 minutes. Serve warm with marinara or spicy dipping sauce.
