Cooking Steps
- Preheat your oven to 400°F (200°C). Toss the sweet potatoes with olive oil, cinnamon, and nutmeg and roast for 50-60 minutes until tender.
- Reduce oven temperature to 375°F (190°C). In a bowl, combine the roasted sweet potatoes, almond milk, vanilla, brown sugar, and maple syrup. Stir in the raisins and marshmallows.
- Grease a baking dish, scoop the filling in, dot with butter, and add marshmallows on top.
- Mix pecans with maple syrup and sprinkle over the casserole.
- Cover with foil and bake for 15 minutes, then uncover and bake for another 15 minutes until golden and melted.
