Ingredients
  

For the Casserole
  • 4 large organic sweet potatoes peeled and cubed
  • 2-3 tablespoons extra virgin olive oil to coat sweet potatoes before roasting
  • 1 teaspoon ground cinnamon in the sweet potato mixture
  • ½ teaspoon nutmeg in the sweet potato mixture
  • 1 cup almond milk or any preferred plant-based milk
  • 2 teaspoons vanilla extract
  • 4 tablespoons unsalted butter cubed
  • cup organic brown sugar
  • ¼ cup pure maple syrup for filling
  • ¼ cup pure maple syrup for topping
  • 1 cup organic raisins soaked and drained
  • 2 cups marshmallows add some during baking and some at the end
For the Topping
  • 1 ½ cups raw pecans mixed with maple syrup for topping

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C). Toss the sweet potatoes with olive oil, cinnamon, and nutmeg and roast for 50-60 minutes until tender.
  2. Reduce oven temperature to 375°F (190°C). In a bowl, combine the roasted sweet potatoes, almond milk, vanilla, brown sugar, and maple syrup. Stir in the raisins and marshmallows.
  3. Grease a baking dish, scoop the filling in, dot with butter, and add marshmallows on top.
  4. Mix pecans with maple syrup and sprinkle over the casserole.
  5. Cover with foil and bake for 15 minutes, then uncover and bake for another 15 minutes until golden and melted.
