For the Steak
  • 2 steaks Sirloin or boneless ribeye steaks about 1.5 inches thick
  • 1 tablespoon Vegetable, canola, or grapeseed oil for searing
  • Salt to taste
  • Pepper to taste
For the Chimichurri Sauce
  • 1 cup Fresh flat-leaf Italian parsley packed and minced
  • 1/4 cup Fresh cilantro packed and minced
  • 1/2 cup Olive oil use high-quality extra virgin
  • 2-3 cloves Garlic minced
  • 2-3 tablespoons Red wine vinegar for acidity
  • 1 teaspoon Crushed red pepper/chili flakes for spiciness
  • 3/4 teaspoon Dried oregano
  • Salt to taste

Method
 

Preparation
  1. Mince garlic, cilantro, and parsley finely. In a mixing bowl, combine with olive oil, red wine vinegar, oregano, salt, and crushed red pepper flakes. Mix well and set aside.
  2. Preheat your oven to 415°F (213°C). Season steaks with salt and pepper generously.
  3. Heat oil in an oven-safe skillet over high heat until shimmering. Sear the steaks for 2 minutes on each side.
  4. Transfer the skillet to preheated oven and bake according to desired doneness. Check the internal temperature with a digital meat thermometer.
  5. Let the steaks rest for 5-7 minutes. Slice and serve with chimichurri sauce on top.
