- In a separate bowl, whisk Greek yogurt, mayonnaise (if using), minced garlic, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the corn mixture, tossing gently to coat evenly.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Before serving, stir gently, adjust seasoning, and garnish with extra cilantro and chili powder.
