For the Spice
  • 1 teaspoon Chili Powder Adjust for spice preference.

Method
 

Cooking Instructions
  1. Preheat grill to medium-high heat, about 400°F (200°C). Grill corn for 10-12 minutes, turning until tender and slightly charred.
  2. Once cool, carefully cut kernels off the cob into a mixing bowl.
  3. Dice cucumber, and chop red onion and cilantro. Add to corn and stir gently to combine.
  4. In a separate bowl, whisk Greek yogurt, mayonnaise (if using), minced garlic, lime juice, chili powder, salt, and pepper.
  5. Pour the dressing over the corn mixture, tossing gently to coat evenly.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  7. Before serving, stir gently, adjust seasoning, and garnish with extra cilantro and chili powder.
