  • 1 tbsp Salt sea or kosher salt
  • 1 tbsp Black Pepper
  • 2 tbsp Olive Oil for searing
For the Glaze
  • 1 medium Yellow Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Beef Broth homemade or store-bought
  • 1/2 cup Balsamic Vinegar or red wine vinegar
  • 2 tbsp Brown Sugar
  • 2 cups Whole Cranberries frozen is fine
  • 2 tsp Fresh Thyme or 1 tsp dried thyme

  • 2 medium Carrots chopped

Method
 

Step-by-Step Instructions
  1. Prepare the beef by patting it dry and seasoning it with salt and black pepper. Let it sit for 30 minutes.
  2. Sear the meat in olive oil for 5-7 minutes on each side until browned.
  3. Sauté chopped onion in the same pot until softened, then add minced garlic and sauté for another minute.
  4. Deglaze the pot with balsamic vinegar, scraping up browned bits, and simmer for 1-2 minutes.
  5. Stir in beef broth and brown sugar, bring to a simmer, then return beef to the pot.
  6. Add cranberries and thyme around the beef, and carrots if using.
  7. Cover the pot and braise in the oven at 325°F for 3 to 3.5 hours.
  8. Rest the roast for 10 minutes after cooking, then skim excess fat from the sauce.
  9. Slice or shred the beef, serve with glaze over the top.
