Ingredients

For the Casserole
  • 6 slices thick-cut bacon Adds a smoky flavor and richness
  • 1 medium yellow onion Provides an aromatic base flavor; sweet or red onion can be substituted
  • 8 ounces button mushrooms Contributes an earthy umami flavor; fresh baby bellas are a great alternative
  • 2 cloves garlic Enhances the depth of flavor; opt for fresh minced garlic
  • 10.5 ounces cream of mushroom soup Acts as the creamy base; can swap with cream of chicken or celery soup
  • 1 cup milk Adds creaminess; whole milk is ideal, but heavy cream works too
  • 2 cups Monterey Jack cheese Provides a mild, creamy texture; can use mozzarella or cheddar
  • 14.5 ounces cut green beans Canned for convenience, but fresh can be used if blanched
  • 2 cups French fried onions Adds a crispy topping that’s essential

Equipment

  • 9x13 inch baking dish
  • Large skillet

Method

Preparation Steps
  1. Preheat your oven to 350°F and lightly spray a 9x13-inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium-low heat, cook the thick-cut bacon until crispy, about 8-10 minutes. Remove the bacon and let it cool before crumbling.
  3. In the same skillet with the bacon grease, add chopped yellow onion and sauté for about 5 minutes until translucent.
  4. Add fresh button mushrooms and cook for another 5 minutes until golden brown. Then add minced garlic and sauté for an additional minute.
  5. Stir in cream of mushroom soup, crumbled bacon, milk, and Monterey Jack cheese. Keep stirring until cheese melts.
  6. Gently fold in the drained cut green beans until evenly coated.
  7. Pour the mixture into the prepared baking dish and top with French fried onions.
  8. Bake uncovered for about 30 minutes until the edges are bubbly and the fried onions are golden.
