  • 1 bag Fritos corn chips or Doritos for a different flavor
  • 1 cup Mexican-style shredded cheese Monterey Jack or cheddar cheese are great substitutes

  • 1 diced tomatoes
  • 0.5 cup olives
  • 0.5 cup chopped jalapeños
  • 1 cup extra cheese for those cheese lovers

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and spray a 13x9 inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, brown 1 pound of ground beef until fully cooked (6-8 minutes). Add 1 finely chopped onion and sauté until softened (4-5 minutes).
  3. Stir in taco seasoning and ½ cup water. Increase heat to high and bring to a gentle boil, stirring for 2-3 minutes until thickened.
  4. Reduce heat to medium and mix in 1 can of black beans, 1 can of diced tomatoes with green chiles, and ½ cup sour cream. Heat for 3-4 minutes.
  5. Layer Fritos corn chips in the prepared baking dish, followed by 1 cup of shredded cheese, then the beef mixture, and top with the remaining cheese.
  6. Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for an additional 5 minutes until cheese is bubbly and golden.
  7. Let cool for a few minutes, then add extra Fritos and your choice of toppings to serve.
