- Preheat your oven to 350°F (175°C) and spray a 13x9 inch baking dish with nonstick cooking spray.
- In a large skillet over medium heat, brown 1 pound of ground beef until fully cooked (6-8 minutes). Add 1 finely chopped onion and sauté until softened (4-5 minutes).
- Stir in taco seasoning and ½ cup water. Increase heat to high and bring to a gentle boil, stirring for 2-3 minutes until thickened.
- Reduce heat to medium and mix in 1 can of black beans, 1 can of diced tomatoes with green chiles, and ½ cup sour cream. Heat for 3-4 minutes.
- Layer Fritos corn chips in the prepared baking dish, followed by 1 cup of shredded cheese, then the beef mixture, and top with the remaining cheese.
- Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for an additional 5 minutes until cheese is bubbly and golden.
- Let cool for a few minutes, then add extra Fritos and your choice of toppings to serve.
