Step-by-Step Instructions
  1. Thinly slice the yellow onions and set aside.

  4. Sprinkle salt and sugar over the onions, reduce heat and let caramelize for approximately 40 minutes.
  5. Pour beef broth and white wine over the onions, add thyme and bay leaf, and bring to a gentle boil.
  6. Reduce heat and simmer uncovered for 30 minutes, seasoning with black pepper.
  7. Toast sliced baguette rounds at 375°F for about 10 minutes.
  8. Ladle soup into bowls, top with toasted baguette and grated cheese.
  9. Broil the bowls for 2-3 minutes until cheese is golden brown.
  10. Serve warm, garnished with fresh thyme.
